Cape Brandy Pudding
Preheat the oven to 180 C.
Cut up 250 g of dried dates, remove the pips.
Mix 5 ml of Bicarbonate of soda with 250 ml
of hot water, add to dates. Set to one side.
Mix together:
200 ml sugar
115 g butter
2 eggs
200 g flour
2 ml baking powder
a pinch of salt
50 g diced nuts
Spoon into ovenproof dish, bake for about 40 minutes.
In the meantime, bring to boil on the stove:
300 g sugar
250 ml water
10 ml butter for about 7 minutes
Remove from stove and add 125 ml brandy and 5 ml of
Vanilla Essence, pour over the hot pudding.
Serve with cream or ice cream.
We call this pudding Tipsy Tart
Bobotie
Cook 1kg of minced beef over slow heat.
Fry 5 chopped onions in a little oil until soft and add to mince.
Add:
10 ml ground ginger
15 ml curry powder
15 ml turmeric
10 ml salt
2 ml pepper
100 g seedless raisins
60 ml chutney
30 ml apricot jam
30 ml white vinegar
30 ml Worcester Sauce
30 ml tomato puree
Cook slowly, stirring continuously for 20 minutes.
Add 2 slices of white bread, soaked in 250 ml milk. add 2 beaten eggs.
spoon mixture into ovenproof dish. Mix 300 ml milk and 2 eggs, pour
over meat, bake in oven at 180 degrees for about 45 minutes.
For the flavours to infuse, it is recommended that the dish be
frozen and reheated when ready to eat.
